You can add a plain text link by copying the YouTube page link (URL), highlighting the section of text that you would like the page to link from and selecting the 'Insert/edit link' icon as shown in the screenshot below.

Unfortunately that happens automatically when you paste a Youtube link. However, you can revert the block back to a paragraph block.
Click on the block to bring up its toolbar, click the Youtube icon to the left of the toolbar, then select Paragraph.
