I have some short videos to submit for creative work and I am also preparing a PDF portfolio. Is it safe to embed the videos in the PDF or better to just keep completely separate as .mp4 or .mov files?

Personally, I've not seen an example of videos embedded into PDFs, but I've seen plenty of instances of videos supplied in the folders in either .mp4 or .mov formats, separate to other documents like PDFs. Once uploaded to GDrive, they can take a little while for the GDrive service to process, but once they're done playback should be available for you to check that everything is okay.
